Ingredients
  

  • 1 pound tomatillos husks removed and rinsed
  • 2 pieces jalapeños or serrano peppers
  • 3 cloves garlic unpeeled
  • 0.5 pieces white onion quartered
  • 1 handful fresh cilantro
  • 1 piece lime juiced
  • 0.5 teaspoon salt
  • 2 tablespoons water optional, for thinning

Method
 

  1. Preheat broiler and place tomatillos, peppers, garlic, and onion on a baking sheet.
  2. Broil for 5–7 minutes, flipping once, until charred and soft.
  3. Remove garlic skins and transfer everything to a blender or food processor.
  4. Add cilantro, lime juice, salt, and blend until smooth.
  5. Adjust with water for consistency and additional lime or salt to taste.
  6. Chill in the fridge for at least 30 minutes before serving.
