- Preheat broiler and place tomatillos, peppers, garlic, and onion on a baking sheet.
- Broil for 5–7 minutes, flipping once, until charred and soft.
- Remove garlic skins and transfer everything to a blender or food processor.
- Add cilantro, lime juice, salt, and blend until smooth.
- Adjust with water for consistency and additional lime or salt to taste.
- Chill in the fridge for at least 30 minutes before serving.
