Ingredients
  

  • 1 12 oz ribeye or New York strip steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter divided
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 2 tablespoons grated Parmesan cheese optional
  • 1 tablespoon chopped parsley or thyme for garnish

Method
 

  1. Let the steak come to room temperature for 20–30 minutes. Pat dry and season with salt and pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the steak for 3–4 minutes per side for medium-rare. Add 1 tablespoon of butter and baste the steak. Remove and rest.
  3. In the same skillet, add the remaining butter and garlic. Sauté until fragrant.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan (if using) and cook until thickened.
  5. Slice the rested steak and drizzle with the creamy garlic sauce. Garnish with herbs and serve immediately.
