- Let the steak come to room temperature for 20–30 minutes. Pat dry and season with salt and pepper.
- Heat olive oil in a cast iron skillet over medium-high heat. Sear the steak for 3–4 minutes per side for medium-rare. Add 1 tablespoon of butter and baste the steak. Remove and rest.
- In the same skillet, add the remaining butter and garlic. Sauté until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan (if using) and cook until thickened.
- Slice the rested steak and drizzle with the creamy garlic sauce. Garnish with herbs and serve immediately.
