Preparing the Dish
- Preheat oven to 400°F and toss zucchini, squash, peppers, carrots, and mushrooms with olive oil, salt, pepper, and Italian seasoning. Roast for 20-25 minutes until tender.
- In a saucepan, melt butter and sauté garlic and onion. Stir in flour and cook for 2 minutes. Gradually whisk in milk, stirring until thick. Season with salt, pepper, and nutmeg.
- Cook lasagna noodles per package directions. Lay them flat on parchment paper to avoid sticking.
- In a 9x13 baking dish, add a layer of white sauce. Layer noodles, veggies, ricotta, spinach, mozzarella. Repeat layers and finish with noodles, sauce, mozzarella, and parmesan.
- Cover with foil and bake at 375°F for 25 minutes. Uncover and bake for another 15 minutes until bubbly and golden.
- Let rest for 10 minutes before slicing and serving.
