Vegetables
  • 1 none zucchini chopped
  • 1 none yellow squash chopped
  • 1 none red bell pepper diced
  • 1 none yellow bell pepper diced
  • 2 none carrots peeled and diced
  • 1 cup mushrooms sliced
  • 2 cups spinach fresh
Cheeses
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.75 cup grated parmesan cheese
Sauce
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg optional

Method
 

Preparation
  1. Preheat oven to 400°F and toss zucchini, squash, peppers, carrots, and mushrooms with olive oil, salt, pepper, and Italian seasoning. Roast for 20-25 minutes until tender.
  2. In a saucepan, melt butter and sauté garlic and onion. Stir in flour and cook for 2 minutes. Gradually whisk in milk, stirring until thick. Season with salt, pepper, and nutmeg.
  3. Cook lasagna noodles per package directions. Lay them flat on parchment paper to avoid sticking.
Assembly and Baking
  1. In a 9x13 baking dish, add a layer of white sauce. Layer noodles, veggies, ricotta, spinach, mozzarella. Repeat layers and finish with noodles, sauce, mozzarella, and parmesan.
  2. Cover with foil and bake at 375°F for 25 minutes. Uncover and bake for another 15 minutes until bubbly and golden.
  3. Let rest 10 minutes before slicing and serving.
