Ingredients
  

  • 3 pieces boneless skinless chicken breasts Sliced thin for quick cooking.
  • 1 quart heavy cream Adds richness and creaminess.
  • 3 cups chicken broth Use low sodium if possible.
  • 4 slices bacon Optional but highly recommended.
  • 4 tablespoons butter For sautéing vegetables and creating a roux.
  • 1/2 cup flour To thicken the soup.
  • 7 oz sundried tomatoes Packed with intense flavor.
  • 1/2 piece onion Diced to enhance the aromatic base.
  • 8 cloves garlic Minced to add depth.
  • 1/2 cup basil Chopped fresh basil adds brightness.
  • 1 cup parmesan cheese Shredded to melt into the soup.
  • 2 lbs Yukon gold potatoes Peeled and chopped into small pieces.
  • 2 teaspoons paprika For a warm flavor profile.
  • 1/2 teaspoon cajun seasoning A hint of spice.
  • 1 teaspoon garlic powder Enhances garlic flavor.
  • 1 teaspoon all-purpose seasoning A blend that elevates overall taste.
  • 1 teaspoon onion powder Boosts onion flavor.
  • 1/2 teaspoon salt To season the ingredients.
  • 2 teaspoons paprika Adds color and warmth.
  • 2 teaspoons salt Adjust according to taste.
  • 1 teaspoon Italian seasoning For an herby flavor boost.

Method
 

  1. In a large pot or Dutch oven, cook the bacon over medium-high heat until crispy. Remove the bacon and place it on a paper towel to drain, leaving the bacon fat in the pot.
  2. Season the chicken breasts with spices listed above before searing them in the reserved bacon fat until browned on both sides. Once fully cooked, remove from pot and set aside.
  3. Add butter to the pot, then sauté diced onions and minced garlic until they become soft and fragrant.
  4. Sprinkle flour into the pot while stirring constantly until it forms a roux that turns golden brown.
