Ingredients
  

Meat and Vegetables
  • 1 lb beef or chicken cut into bite-sized pieces
  • 1 cup potatoes peeled and cubed
  • 1 cup carrots sliced
  • 1 medium onion chopped
  • 1 cup peanuts unsalted, chopped
Curry Base
  • 2 tbsp Massaman curry paste adjust to taste
  • 1 can coconut milk full-fat for creaminess
  • 1 cup beef or chicken broth low sodium preferred
  • 2 tbsp fish sauce for seasoning
  • 1 tbsp brown sugar to balance flavors
  • 1 tbsp lime juice freshly squeezed

Method
 

Prepare Ingredients
  1. Chop the meat, potatoes, carrots, and onion into bite-sized pieces.
  2. Measure out the curry paste, coconut milk, broth, fish sauce, brown sugar, and lime juice.
Cook the Curry
  1. In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the Massaman curry paste and stir for 1-2 minutes until fragrant.
  3. Add the meat and cook until browned on all sides.
  4. Pour in the coconut milk and broth, then add the potatoes and carrots. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 45 minutes, stirring occasionally.
  6. Stir in the fish sauce, brown sugar, and lime juice. Add the chopped peanuts just before serving.
Serve
  1. Serve the Massaman curry hot over steamed rice.

Notes
