Ingredients
  

  • 4 ounces feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes
  • 1 cup fresh spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley or basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease 4 ramekins with olive oil.
  2. Divide feta cheese, cherry tomatoes, and spinach evenly among the ramekins.
  3. Add garlic to each ramekin and drizzle with a little more olive oil.
  4. Crack one egg into each ramekin, on top of the layered ingredients.
  5. Season each with salt and black pepper.
  6. Bake for 12-15 minutes, depending on your preferred yolk texture.
  7. Garnish with fresh herbs and serve warm with bread or pita.
