  • 2 cups corn kernels Fresh, canned, or frozen will work well.
  • 1/4 cup mayonnaise Adds creaminess to the salad.
  • 1/4 cup sour cream Enhances the tangy flavor profile.
  • 1/4 cup crumbled cotija cheese Provides a salty finish.
  • 1 tbsp lime juice Brightens up the entire dish.
  • 1 tsp chili powder Adds a subtle kick of spice.
  • 1/2 tsp paprika Gives a hint of smokiness.
  • 1/2 tsp garlic powder For an aromatic touch.

  • 1/4 cup chopped cilantro Freshens up the flavors.

Method
 

  1. Boil pasta according to package instructions until al dente. Drain and set aside to cool.
  2. In a large bowl, combine corn, mayonnaise, sour cream, cotija cheese, lime juice, chili powder, paprika, garlic powder, salt, pepper, cilantro, red onion, and jalapeño. Mix well.
  3. Add the cooled pasta to the bowl and toss everything together until well combined. Adjust seasoning if necessary.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
