Mini Peanut Butter Cup Cookies

Delightful treats made from a soft cookie dough baked in miniature muffin tins, topped with mini peanut butter cups.

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup sugar
  • 2/3 cup packed light brown sugar
  • 2 large eggs
  • 3/4 cup creamy peanut butter
  • 1 1/2 teaspoons vanilla extract
  • 34 mini peanut butter cups

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin with cooking spray.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and kosher salt until well combined, then set it aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together softened unsalted butter, sugar, and light brown sugar until light and fluffy.
  4. Beat in each egg one at a time into your creamed mixture, then add creamy peanut butter and vanilla extract; mix until smooth.
  5. Gently add the flour mixture to your stand mixer bowl, beating just until combined.
  6. Using a small ice cream scoop or two spoons, portion heaping tablespoons of dough into each muffin cup. Bake for 18-22 minutes until golden brown; immediately push a mini peanut butter cup into each cookie center before letting them cool.
