Ingredients
  

  • 5 large russet potatoes
  • 4 tablespoons unsalted butter
  • 1 cup sour cream
  • 4 ounces cream cheese
  • 1/2 cup whole milk or heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped chives or green onions optional

Method
 

  1. Peel and chop the potatoes into chunks. Boil in salted water until fork-tender, about 15–20 minutes.
  2. Drain and mash the potatoes while still hot.
  3. Add butter, sour cream, cream cheese, and milk. Mix until smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Spread half the mashed potatoes into a greased baking dish.
  6. Sprinkle 1 cup of shredded cheese over the layer.
  7. Add the remaining mashed potatoes and top with the rest of the cheese.
  8. Bake at 375°F for 25–30 minutes or until golden and bubbly.
  9. Garnish with chives or green onions before serving.
