Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup diced yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 2 cups chopped zucchini
  • 1 cup chopped yellow squash
  • 1 cup green beans, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with juice
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked ditalini pasta

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook for 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes, zucchini, yellow squash, green beans, kidney and cannellini beans.
  4. Season with Italian seasoning, salt, and pepper. Stir to coat the vegetables evenly.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  7. Meanwhile, cook pasta separately according to package instructions. Drain and set aside.
  8. Stir in cooked pasta right before serving. Adjust salt and pepper to taste.
