Ingredients
  

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley optional

Method
 

  1. Wash and scrub sweet potatoes well. Leave the skin on and slice into 1/2-inch thick rounds.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Toss sweet potato slices in a bowl with olive oil, garlic powder, Italian herbs, salt, and pepper.
  4. Arrange slices on baking sheet in a single layer and roast for 20 minutes.
  5. Flip slices, sprinkle Parmesan cheese on top, and bake an additional 15–20 minutes until golden and crispy.
  6. Garnish with chopped parsley and serve warm.
