- Wash and scrub sweet potatoes well. Leave the skin on and slice into 1/2-inch thick rounds.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potato slices in a bowl with olive oil, garlic powder, Italian herbs, salt, and pepper.
- Arrange slices on baking sheet in a single layer and roast for 20 minutes.
- Flip slices, sprinkle Parmesan cheese on top, and bake an additional 15–20 minutes until golden and crispy.
- Garnish with chopped parsley and serve warm.
