  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
Peach Topping
  • 2 cups sliced peaches (fresh or canned)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
  • 1 teaspoon cornstarch (optional) for thickening

Method
 

Preparation
  1. Combine graham crackers and melted butter. Press into a springform pan and chill for 20 minutes.
  2. Beat cream cheese, granulated sugar, and vanilla until smooth.
  3. Whip heavy cream with powdered sugar to stiff peaks, then fold into cream cheese mixture.
  4. Pour filling onto crust, smooth the top, and refrigerate for 4–6 hours or overnight.
  5. In a pan, cook peaches, brown sugar, cinnamon, and butter until syrupy. Add cornstarch if needed. Cool.
  6. Spoon peach topping over set cheesecake. Chill for another hour before serving.
