  • 1 box brownie mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup creamy peanut butter
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Method
 

Baking Instructions
  1. Preheat oven to 350°F and line a muffin tin with liners or grease with nonstick spray.
  2. Prepare brownie batter according to package instructions using eggs and oil.
  3. Fill each muffin cup about 2/3 full with brownie batter.
  4. Bake for 18-20 minutes or until a toothpick comes out mostly clean.
  5. While cooling, mix peanut butter, powdered sugar, and vanilla until smooth.
  6. Press the center of each brownie down gently to form a well.
  7. Spoon the peanut butter filling into each well.
  8. Top with chocolate chips while the cups are still warm.
  9. Let cool completely before serving or storing.
