  • 6 Persian cucumbers or 2 English cucumbers Choose firm, fresh cucumbers for the best crunch.
  • 6 medium Roma tomatoes Opt for ripe tomatoes that add sweetness and juice to the salad.
  • 1 small red onion Provides a mild flavor and adds a pop of color.
  • 3 small Persian limes or 1 large lemon About 5 tbsp of fresh lemon juice.
  • 2 tbsp dried mint Adds a unique herbal note typical in Persian cuisine.
  • 3 tbsp olive oil High-quality extra virgin olive oil enhances flavor and richness.
  • Salt and pepper To taste, essential for rounding out all the flavors.

Method
 

  1. Peel and finely chop the red onion until it reaches a small dice.
  2. Cut the ends off the cucumbers, then slice them in half lengthwise before chopping them finely.
  3. Halve each Roma tomato and remove the seeds before finely chopping them.
  4. Squeeze your lemon or lime over chopped veggies, then sprinkle salt, pepper, and dried mint into the bowl.
  5. Incorporate the chopped Roma tomatoes, red onion, and cucumber into your citrus mixture, ensuring everything is evenly coated.
  6. Just before serving, drizzle high-quality extra virgin olive oil over your salad for added richness and depth of flavor.
