Baking Procedure
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper. Lightly grease the sides.
- In a mixing bowl, whisk together the eggs, maple syrup, and vanilla until smooth.
- Stir in almond flour, chia seeds, and salt. Mix until well combined.
- Fold in chopped pistachios and cranberries, reserving a few for topping.
- Spread the mixture evenly in the baking dish. Sprinkle reserved toppings on top.
- Bake for 25–28 minutes or until golden and firm in the center.
- Cool completely before slicing into squares. Store in an airtight container.
