  • 1/4 teaspoon salt
  • 1 1/2 cups mini marshmallows

Method
 

  1. Preheat oven to 350°F (175°C) and butter a 9×13-inch baking dish.
  2. Peel and boil sweet potatoes until fork-tender, then mash until smooth.
  3. In a large bowl, mix mashed sweet potatoes with 1/2 cup brown sugar, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt until well combined.
  4. Spread mixture evenly in prepared baking dish.
  5. In a small bowl, mix chopped pecans with 2 tablespoons brown sugar and sprinkle over the sweet potatoes.
  6. Top with mini marshmallows in an even layer.
  7. Bake uncovered for 25–30 minutes, or until the marshmallows are golden and puffed.
