Roasted Mushrooms with Garlic & Thyme

Ingredients
  

  • 16 pieces open cup mushrooms Stalks cut level for even cooking.
  • 3 tbsp olive or vegetable oil For sautéing the mushrooms.
  • 2 cloves garlic Chopped very finely to infuse flavor.
  • 3 tbsp unsalted butter Softened for easy mixing with other ingredients.
  • 2 tbsp fresh thyme Chopped to enhance aroma and taste.
  • ½ tsp garlic powder Adds depth to the garlic flavor profile.
  • 5 tbsp fresh breadcrumbs For a crunchy topping.
  • 1 1/2 tbsp lemon juice Brightens the flavors.
  • to taste salt Essential seasoning.
  • to taste freshly ground black pepper Essential seasoning.

Method
 

  1. Preheat your oven to 400F.
  2. In a skillet, lightly fry the mushrooms cap-side down in hot oil for 2-3 minutes.
  3. Carefully transfer the sautéed mushrooms into a 9x13 cooking dish with stalks facing upwards.
  4. In a small bowl, mix together softened butter, finely chopped garlic, fresh thyme, lemon juice, and seasoning until well combined.
  5. Generously spoon the garlic butter mixture onto each mushroom and press fresh breadcrumbs on top.
  6. Bake for about 15 minutes until golden around the mushroom caps.
