Ingredients
  

Pasta and Vegetables
  • 12 oz Pasta (penne or fusilli) Uncooked
  • 1 medium Zucchini Chopped
  • 1 medium Bell Pepper Chopped
  • 1 medium Red Onion Chopped
  • 1 cup Cherry Tomatoes Halved
  • 3 tbsp Olive Oil For roasting
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste
Feta and Herbs
  • 1 cup Feta Cheese Crumbled
  • 1 tbsp Fresh Basil Chopped
  • 1 tbsp Fresh Parsley Chopped
  • 1 tbsp Lemon Juice Freshly squeezed

Method
 

Roast the Vegetables
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil, salt, and pepper, and toss to coat.
  3. Spread the vegetables evenly on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
Cook the Pasta
  1. While the vegetables are roasting, bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Combine and Serve
  1. In a large bowl, combine the cooked pasta, roasted vegetables, feta cheese, basil, parsley, and lemon juice. Toss gently to combine.
  2. Serve warm, garnished with additional feta and herbs if desired.
