Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on preferred
Marinade
  • 1 cup apple cider unsweetened
  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 2 cups apples sliced, preferably Granny Smith
  • 1 cup onion sliced

Method
 

Marinate the Chicken
  1. In a bowl, mix apple cider, olive oil, rosemary, garlic powder, salt, and black pepper. Add chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Cook the Chicken
  1. Heat a large skillet over medium heat. Remove chicken from marinade, reserving marinade. Add chicken to the skillet, skin side down. Cook for 7-8 minutes until golden brown.
  2. Flip the chicken and pour the reserved marinade over it. Add sliced apples and onions around the chicken. Cover and cook for an additional 25-30 minutes until chicken is cooked through.
Serve
  1. Remove chicken from skillet and let rest for 5 minutes. Serve with apples and onions on the side.

Notes
