Ingredients
  

Vegetables
  • 2 cups broccoli florets
  • 2 cloves garlic
Condiments
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
Dairy
  • 1/2 cup grated Parmesan cheese
Pasta
  • 8 ounces pasta shells
Seasonings
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup reserved pasta water

Method
 

Cooking Instructions
  1. Steam the broccoli florets until fork-tender, about 7–9 minutes.
  2. In a blender, combine broccoli, garlic, lemon juice, olive oil, Parmesan, salt, and pepper. Blend until creamy.
  3. Cook pasta shells in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
  4. Return pasta to the pot and toss with the broccoli sauce. Add pasta water as needed for creaminess.
  5. Serve with extra Parmesan and a few whole broccoli florets for garnish.
