- Preheat the oven to 375°F and grease a baking dish.
- In a skillet, melt butter over medium heat and sauté onion and celery until softened.
- In a mixing bowl, combine sautéed vegetables with stuffing mix and chicken broth. Stir until moist and cohesive.
- Butterfly the chicken breasts, being careful not to cut all the way through.
- Season both sides of the chicken with salt, pepper, and poultry seasoning.
- Stuff each chicken breast with the prepared stuffing and place in the baking dish.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10–15 minutes or until chicken reaches 165°F internally.
- Serve hot, optionally topped with warm gravy.
