Ingredients
  

  • 2 cups all-purpose flour Spoon and level for accuracy.
  • 2 tsp baking powder This helps the bread rise perfectly.
  • 1/4 tsp cinnamon Adds warmth and flavor depth.
  • 1/2 tsp salt Enhances the sweetness of the bananas.
  • 1 3/4 cups very ripe bananas Mashed, for maximum banana flavor.
  • 1/2 cup packed light or dark brown sugar Provides moisture and sweetness.
  • 1/2 cup mild-flavored vegetable or canola oil Keeps the bread moist without overpowering flavors.
  • 2 large eggs Binds the ingredients together effectively.
  • 2 tsp vanilla extract Adds aromatic sweetness to the mix.
  • 2 medium-sized ripe bananas Chopped, for added texture in every bite.
  • 1 tbsp granulated white sugar For sprinkling on top if desired.
  • 1/2 tsp cinnamon Optional topping enhancement.
  • 1 medium ripe banana Halved, for decorative topping if desired.

Method
 

  1. Preheat the oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper.
  2. In a small bowl, combine the flour, baking powder, cinnamon, and salt. Whisk together until well blended.
  3. In a large mixing bowl, combine the mashed bananas with brown sugar until just mixed. Slowly add in the oil while whisking gently, then add eggs and vanilla extract.
  4. Add the dry ingredients mixture into the wet ingredients gradually while whisking gently just until combined. Fold in chopped banana pieces.
  5. If desired, combine sugar and cinnamon for a topping mixture; pour batter into prepared pan and top with halved banana before sprinkling with cinnamon sugar. Bake for about 55-65 minutes.
  6. Once baked, cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
