Preparation
- Preheat oven to 400°F. Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 20 minutes until tender and slightly crisp.
- In a skillet, cook ground sausage over medium heat until browned. Drain any excess fat.
- In the same skillet, sauté onion, garlic, and bell peppers until soft. Add peas and cook for 2 minutes.
- In a casserole dish, layer roasted sweet potatoes, sausage, and sautéed veggies.
- Top with shredded cheese and bake at 375°F for 15–20 minutes until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
