Preparation
- Heat a skillet with a little oil and fry the tortillas until golden and crispy. Drain on paper towels.
- Cook ground beef in a skillet over medium heat until browned. Drain fat.
- Add taco seasoning and water. Stir and simmer until thickened.
- Spread refried beans on one fried tortilla, then top with seasoned beef.
- Place a second tortilla on top and spread taco sauce over it.
- Sprinkle shredded cheese over the top and place on a baking sheet.
- Bake or broil at 400°F for about 5 minutes until cheese is melted.
- Top with diced tomatoes, green onions, and red onion. Slice and serve hot.
