Ingredients
  

  • 6 oz corn chips For added crunch and flavor.
  • 2 lbs lean ground beef The base of the meatloaf, providing protein.
  • 2 large eggs Acts as a binder for the meat mixture.
  • 1.5 cups corn and black bean salsa Adds moisture and flavor.
  • 1 oz taco seasoning Enhances the taco flavor profile.
  • 1 teaspoon salt To season the meat mixture.
  • 1 teaspoon pepper For a hint of spice.
  • 1 teaspoon garlic powder Adds depth to the flavor.
  • 2 cups shredded Mexican cheese blend Melts beautifully on top for richness.

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Pour the corn chips into a large Ziploc bag and crush them using a rolling pin until you achieve coarse crumbs.
  3. In a large mixing bowl, combine the lean ground beef with the crushed corn chips, eggs, and half a cup of salsa. Add in taco seasoning, salt, pepper, and garlic powder before mixing thoroughly with your hands.
  4. Fold in one cup of shredded Mexican cheese blend into the meat mixture.
  5. Line a 9 x 5 inch loaf pan with aluminum foil and spray it lightly with cooking spray. Press the meat mixture into the pan firmly and top it off with one cup of salsa before baking in your preheated oven for 40 minutes.
  6. Once baked, remove the meatloaf from the oven, sprinkle the remaining cup of shredded cheese on top, then return it to bake for an additional 10-15 minutes until it reaches an internal temperature of 160°F (70°C). Allow it to rest before slicing and serving warm.
