Ingredients
  

For the Turkey
  • 1 lb ground turkey lean
For the Teriyaki Sauce
  • 1/4 cup soy sauce low sodium
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger freshly grated
For the Bowl
  • 2 cups cooked rice white or brown
  • 1 cup broccoli florets steamed
  • 1 cup carrots sliced
  • 1 cup snap peas trimmed
  • 2 tbsp sesame seeds for garnish
  • 2 scallions sliced for garnish

Method
 

Prepare the Rice
  1. Cook rice according to package instructions in a rice cooker.
  2. Once cooked, set aside and keep warm.
Make the Teriyaki Sauce
  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
Cook the Turkey
  1. In a large skillet over medium heat, add ground turkey and cook until browned, about 5-7 minutes.
  2. Drain excess fat if necessary.
  3. Pour the teriyaki sauce over the turkey and stir to combine.
  4. Cook for an additional 5 minutes until the sauce thickens slightly.
Assemble the Bowls
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with the teriyaki turkey, steamed broccoli, sliced carrots, and snap peas.
  3. Garnish with sesame seeds and sliced scallions.
