Ingredients
  

  • 2 cups butternut squash Peeled and cubed for natural sweetness.
  • 2 cups carrots Peeled and sliced to add vibrant color and nutrients.
  • 2 cups potatoes Chopped to create heartiness in the soup.
  • 2 cups celery Chopped for crunch and flavor depth.
  • 1 cup green lentils Packed with protein and fiber, these are the star ingredient.
  • 3/4 cup yellow split peas Or just use more lentils for extra protein.
  • 1 onion Chopped to enhance the flavor profile.
  • 5 cloves garlic Minced to provide aromatic goodness.
  • 8-10 cups vegetable or chicken broth For a flavorful base that ties everything together.
  • 2 teaspoons herbs de provence A blend of herbs that adds depth to the soup.
  • 1 teaspoon salt To taste, enhancing all the flavors.
  • 2-3 cups kale Stems removed and chopped, adding nutrition and texture.
  • 1 cup parsley Chopped for freshness and garnish.
  • 1/2 cup olive oil Rosemary olive oil or other herb-infused oil is delicious here.
  • apple juice, apple vinegar, or lemon juice To add a nice tangy bite at the end.

Method
 

  1. Place all ingredients in the crockpot including the cubed butternut squash, sliced carrots, chopped potatoes, chopped celery, green lentils, yellow split peas, chopped onion, minced garlic, broth, herbs de provence, salt, kale, parsley, olive oil, and your choice of apple juice or vinegar.
  2. Cover your crockpot and cook on high for 5-6 hours or on low for 7-8 hours until all veggies are tender and flavors meld beautifully.
  3. After cooking time is complete, scoop about 4 cups of the soup into a blender along with the olive oil. Pulse gently until semi-smooth; this will create a creamy emulsion with the broth.
  4. Pour the blended mixture back into the crockpot and stir well to combine with remaining ingredients before adding in chopped kale and parsley.
  5. Turn off heat and let everything rest before serving; this allows flavors to deepen even further. Season to taste with additional salt or your acidic ingredient like apple juice or vinegar for that tangy kick!
