- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Scoop dough into 1-tablespoon balls and slightly flatten each one.
- Bake for 9–11 minutes or until the edges are lightly golden.
- While cookies are still warm, press a marshmallow into the center of each cookie. Let sit for 2 minutes, then gently press the marshmallow down slightly.
- Once cooled, spoon melted white chocolate or vanilla icing around each marshmallow to create the “melted” snow.
- Use black and orange decorating gel to make eyes, buttons, and noses.
