- Heat a large soup pot over medium heat. Add olive oil and sausage. Cook until browned, then remove and set aside.
- In the same pot, sauté onion, garlic, and celery until fragrant and softened.
- Stir in tomato paste, thyme, salt, and pepper. Cook for 2 minutes.
- Pour in beef broth. Add carrots, pearl onions, and potatoes. Simmer for 20–25 minutes until veggies are tender.
- Return the sausage to the pot. Stir well and simmer for 5 more minutes.
- Adjust seasoning if needed. Serve hot with crusty bread or biscuits.
