Description

Zuppa Toscana (Olive Garden Copycat) is a comforting Italian soup that combines hearty flavors with a creamy texture, making it an ideal dish for chilly evenings or cozy gatherings.


Ingredients

  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • Fine sea salt and freshly-ground black pepper
  • 6 pieces bacon, cooked and crumbled

Instructions

  1. In a large stockpot over medium-high heat, cook the Italian sausage until browned. Use a slotted spoon to transfer the sausage to a plate, leaving behind some grease.
  2. Add onions to the pot and sauté for about 5 minutes. Then add minced garlic and sauté for an additional minute.
  3. Stir in the diced potatoes and chicken stock, then return the sausage to the pot. Bring to a simmer and cook until potatoes are tender (about 10 minutes).
  4. Mix in chopped kale and heavy cream; simmer for another 5 minutes. Season with salt and pepper to taste.
  5. Serve warm topped with crumbled bacon.
