  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar for topping
  • 1/2 teaspoon cinnamon for topping
  • 1 1/2 cups boiling water

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, cinnamon, pumpkin pie spice, salt, granulated sugar, and brown sugar.
  3. Stir in the pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Spread the batter into a greased 8x8-inch baking dish.
  5. In a separate bowl, mix brown sugar and cinnamon for topping and sprinkle over the batter.
  6. Top with chopped pecans.
  7. Gently pour boiling water over the top of the batter—do not stir.
  8. Bake for 40–45 minutes until the top is set and golden, and sauce bubbles at the edges.
  9. Let it rest for 5 minutes before serving.
