- In a skillet over medium heat, cook the ground beef until browned. Drain the grease.
- Add taco seasoning and 1/4 cup water. Simmer for 2–3 minutes until thickened.
- Stir in tomatoes, onions, and chilies. Remove from heat and let it cool slightly.
- Stir in both cheeses and mix to combine evenly.
- Lay a tortilla flat, spoon filling into center, fold sides, and roll tightly.
- Heat oil in skillet and place chimichangas seam side down. Fry until golden and crispy on all sides.
- Alternatively, air fry at 375°F for 8–10 minutes or bake at 400°F for 15–20 minutes.
- Garnish with toppings of choice and serve immediately.
