- In a large bowl, cream together softened butter and sugar until fluffy.
- Beat in the egg and peppermint extract until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients to form a dough.
- Wrap dough in plastic wrap and chill for 30 minutes.
- Preheat oven to 350°F (175°C).
- Roll out dough between parchment paper to 1/8-inch thick and cut into rounds.
- Place cookies on a parchment-lined baking sheet.
- Bake for 10–12 minutes, then cool completely on a wire rack.
- Melt chocolate and coconut oil in a double boiler or microwave. Stir in peppermint extract.
- Dip each cooled cookie into chocolate, letting excess drip off.
- Place dipped cookies on parchment paper to set completely before serving.
