  • 1/2 teaspoon baking powder
  • 10 ounces semi-sweet chocolate
  • 1 tablespoon coconut oil optional
  • 1/2 teaspoon peppermint extract for coating

Method
 

  1. In a large bowl, cream together softened butter and sugar until fluffy.
  2. Beat in the egg and peppermint extract until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients to form a dough.
  5. Wrap dough in plastic wrap and chill for 30 minutes.
  6. Preheat oven to 350°F (175°C).
  7. Roll out dough between parchment paper to 1/8-inch thick and cut into rounds.
  8. Place cookies on a parchment-lined baking sheet.
  9. Bake for 10–12 minutes, then cool completely on a wire rack.
  10. Melt chocolate and coconut oil in a double boiler or microwave. Stir in peppermint extract.
  11. Dip each cooled cookie into chocolate, letting excess drip off.
  12. Place dipped cookies on parchment paper to set completely before serving.
