Ingredients
  

Potato Skins
  • 4 medium Russet Potatoes Scrubbed and halved
  • 2 tablespoons Olive Oil For brushing
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper Freshly ground
  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh Parsley Chopped
  • 1 tablespoon Fresh Rosemary Chopped
  • 1 tablespoon Fresh Thyme Chopped

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Scoop out the flesh from the potato halves, leaving about 1/4 inch of potato on the skin.
  3. Brush the potato skins with olive oil and season with salt and pepper.
Season the Skins
  1. In a small bowl, mix together minced garlic, parsley, rosemary, and thyme.
  2. Sprinkle the garlic herb mixture evenly over the potato skins.
Roast the Skins
  1. Place the potato skins on a baking sheet, cut side up.
  2. Roast in the preheated oven for 25-30 minutes, or until golden and crispy.
  3. Remove from the oven and let cool slightly before serving.
